RECIPE | Chicken Wedge Salad





After around 6 or 7 months of blogging I'm finally expanding into a wider variation of post types and I've started off with more lifestyle-esque quick reads and recipes. This is one of those sorts of posts. A quick, healthy recipe that you can literally throw anything in, those leftovers and yummy bits. Ryan and I have been staying at my mum's this week while she's been on holiday, and as she returns tomorrow I've just been using up all of the leftover bits we have in the fridge, hence the chicken wedge salad.

You can make this however you please, but as I like to do a good workout before my evening meal I like to get a good amount of carbohydrate into my dinner, so I've used around two average sized potato worth of wedges. I left the skin on, sliced to my desired shape and size and coated them in a slight layer of tikka paste, pictured above. I also seasoned my half chicken breast with jerk seasoning, put in a slap of sunflower spread, wrapped in tin foil and put both in the oven for 30 minutes.

In terms of salad I didn't have all that much in that I could use, so this consisted of just lettuce and sweetcorn mainly, as well as a little bit of stuffing I had left over from the roast dinner I made last night. Once the chicken and wedges are cooked thoroughly, you can literally throw it all together.

It honestly is that simple. It's relatively healthy but also filling, all of the ingredients used are clean and it really will keep you going right through till teatime. It's just gone 5pm now and I'll probably eat a banana before my workout in around an hour and have tea after that. Don't forget, I'm not a dietitian or a nutritionist so I can't tell you that this is a brilliant thing to eat, but it ain't half bad!

    After doing exercising I could literally eat a horse haha, but this looks very satisfying!
